Ingredients

  • 1/2 Cup Pancetta (diced in 1/4″ pieces)
  • 1 Small Yellow or White Onion – minced
  • 1 Tsp Ground Black
    Pepper
  • 1 Pound Spaghetti
  • 6 Egg Yolks (room temperature)
  • 6 oz. Parmesan Cheese (Finely grated)

Directions

  1. Place a large pot of water over medium-high heat to boil
  2. Generously salt the boiling water and add the pasta, stirring occasionally
  3. Cook the pasta until al dente, according to package directions
  4. Drain pasta and reserve 1/2 cup of the pasta water
  5. In the large 12” sauté pan over medium heat, slowly cook the pancetta until the fat is rendered and the pancetta is crispy
  6. Add the pepper and lower the heat to medium low
  7. Add the minced onions and cook them until they are translucent
  8. Reduce the heat to low and add the reserved pasta water and the egg yolks
  9. Gently swirl the pan to combine
  10. Add the pasta and the cheese; toss to combine
  11. Serve immediately
