Learn how to whip up a frightfully delicious Pumpkin Booo-rittle

umpkin Seed Brittle is a great treat to make with some of those pumpkin seeds from carving jack o’ lanterns. The brittle can be broken up into small pieces and bagged up to give to guests for a take away from a fall party.

Ingredients

  • 1/2 Tsp Baking Soda
  • ¼ Tsp Salt — omit if using store bought pumpkin seeds
  • ½ Tsp Ground Cinnamon
  • 1/8 Tsp Ground Cloves
  • 1/8 Tsp Ground Ginger
  • 2 Cups Sugar
  • 1 Cup Corn Syrup
  • 2 Cups Pumpkin Seeds
  • 8 Tbsp Unsalted Butter — room temperature & cut into small pieces

Directions

  1. Place the silicon baking mat onto the rimmed baking sheet and set aside
  2. Combine the baking soda, salt, cinnamon, cloves, ginger in a small bowl and set aside
  3. Place the sugar and corn syrup into the heavy bottom sauce pan
  4. Place the pan over medium high heat and stir until just the sugar dissolves into the syrup
  5. Stop stirring and cook the mixture until the thermometer reads 255F
  6. Quickly stir in the pumpkin seeds and continue to cook, stirring constantly, until the thermometer reads 300F
  7. Remove from heat and stir in the baking soda, salt, spice mixture
  8. Stir in the butter until completely incorporated
  9. Pour the mixture onto the prepared baking sheet
  10. Leave the brittle to cool and harden before breaking up into pieces & enjoying

Serving Suggestions: Break up the brittle into random shards & stick into your favorite scooped ice cream, pumpkin pie or apple cobbler
